An open fire Grilled Roast Beef sandwich with cheese, onions, and mushrooms, Philly style or as a classic Roast Beef, is good eating hot off the barbecue.

THE INGREDIENTS YOU'LL NEED:

  • Rib eye Roast – 3 to 4 lbs.
  • SPG Seasoning – Recipe found here
  • Onions – 3 chopped
  • Mushrooms – 1 lb. sliced
  • Butter – 2 Tbsp.
  • Processed Cheese (Velveeta) – 3 lbs.
  • Beef Broth
  • Sandwich Rolls
  • Small Pot
  • Skillets – 2
  • Grills – 2 or 1 grill if your grill may be large enough for both skillets and the pot

DIRECTIONS GETTING READY

1. Set up your grills for indirect grilling. Place hot coals on 1 side of the grill and no coals on the other side of the grill. 2. Place your roast in the freezer for 1 hour to firm up and make slicing easier

COOKING

3. Place a skillet on the grill directly over the hot coals 4. Melt 2 Tbsp. of butter in the skillet 5. Place the chopped Onion and the Sliced mushrooms in the skillet to start sautéing 6. While the onions/mushrooms are cooking thinly slice the roast. Get it as thin as you can. 7. Cube the American Processed Cheese and put in the pot 8. Place the pot on the same grill as the onions but on the side with no coals. Remember to stir the cheese occasionally to help it melt and prevent burning 9. Put the 2nd skillet on the other grill on the side with no coals 10. Pour beef broth into the bottom of the skillet 11. Season the thinly sliced beef roast with SPG Seasoning 12. Place the beef on the grill directly over the hot coals. You will not be able to get it all on at once so just put as much as you can handle at a time. The beef will sear very quickly 13. After the beef has seared on both sides place it in the skillet with the beef broth to continue cooking and to get tender 14. Keep searing the beef And adding it to the skillet until all the beef is done. Add beef broth to the skillet if needed 15. Place the lid on the grill that has the beef and let cook for a few minutes 16. Remove the beef from the skillet leaving the beef broth in the skillet 17. Pour the onion/mushrooms into the skillet with the beef broth 18. Place the beef on a cutting board and chop it up

FINALIZING

19. Slice a bread roll open, pile in the beef, top with onions & Mushrooms then ladle on the melted processed cheese
