SALMON WITH GINGER CHILI SAUCE

Grilled Salmon filet basted with a ginger and chili sauce makes for some good eating at the Pit. And it's real quick and easy to do!

THE INGREDIENTS YOU'LL NEED:

  • Salmon Fillets – 2 - 1 1/2 pounds each
  • Olive Oil – 2-3 teaspoons

GINGER CHILI SAUCE:

  • Water – ½ cup
  • Rice Vinegar – ½ cup
  • Soy Sauce – 1 Tablespoon
  • Chili Sauce – 1 Tablespoon
  • Garlic – 4 cloves, minced
  • Ginger – 2 Tablespoons, minced
  • Brown Sugar – 4 Tablespoons
  • Butter – 2 Tablespoons

DIRECTIONS: GETTING READY

1. Bring grill temperature up to 350 degrees Fahrenheit with coals offset for indirect cooking. 2. Combine all ingredients for ginger chili sauce in a sauce pan and place directly over hot coals. 3. Heat until it reaches a simmer, stir often. 4. Coat fillet skin with olive oil and place on a baking pan skin side down. 5. Drizzle 3-4 tablespoons of ginger chili sauce over fillets.

MAKING

1. Place pan opposite hot coals for indirect cooking. 2. Cover and cook for 10 minutes. 3. After 10 minutes, remove cover and baste with more ginger chili sauce. 4. Cover and let cook another 10 – 15 minutes. 5. Remove lid and check for doneness. Fish should be soft and flakey. If they are firm, cover and cook another 10 minutes.

FINALIZING

1. Use spatula to cut fish into portions while still on the pan. 2. Remove and place on a plate.

SERVING

1. Serve with wild rice, ginger chili sauce, and hush puppies. 2. Sit back, relax, and enjoy!!
