GRILLED FROG RIBITTS

All that croakin’ noise at night gettin’ to ya ? A few grilled bacon wrapped bull frogs and some ice cold Buds will keep the mud pond quiet. A New Orleans Cajun tribute to Justin Wilson, “I gar-on-tee!”

THE INGREDIENTS YOU’LL NEED:

  • Frog Ribitts – 4
  • Orange – 1 cut into 1/4s
  • Chilies – 8
  • Bacon
  • Black Iron Skillet

FOR THE BASTING SAUCE

  • Butter – 4 Tbs
  • Ground Black Pepper – 1 Tbs
  • Ginger – 4 thin slices
  • Shallot – 1 minced
  • Pickled Peppers – To Taste

DIRECTIONS
GETTING READY

1. Set up your grill for direct grilling – medium heat
2. Place ¼ of an orange into the body cavity of each frog
3. Wrap each frog in 2 slices of bacon
4. Place 2 chilies into the mouth of each frog

MAKING
THE BASTING SAUCE

5. Place the skillet on the grill and add
6. Butter – 4 Tbs
7. Ground Black Pepper – 1 Tbs
8. Ginger – 4 thin slices
9. Shallot – 1 minced
10. Pickled Peppers – To Taste

COOKING

11. Place the frogs directly over the coals
12. Continually baste until done cooking
13. Frogs are done when the bacon is cooked

SERVING

14. Serve and Enjoy!
