Po Boy Beef Sandwich grilled

This Louisiana classic Po-Boy is about the best damn Beef Sandwich you can make on the barbecue grill. And it's real easy to cook up, as shown by the BBQ Pit Boys

The ingredients you'll need:

  • Beef Chuck Roast – 4 lbs. 
  • Olive Oil – 5-6 Tablespoons
  • Medium Onion - 1
  • Whole Garlic Clove - 1
  • Garlic Powder – 2 teaspoons 
  • Cajun Seasoning – 2 teaspoons
  • Salt – to taste
  • Pepper – to taste
  • Beef Broth – 4 cups
  • Flour – 2-3 Tablespoons
  • Kitchen Bouquet – follow bottle directions or use your favorite beef gravy.

FOR SERVING

  • French Baguettes -- 12-14” long
  • Mayonnaise
  • Fresh sliced tomatoes
  • Shredded lettuce

Directions:

GETTING READY

1. Bring grill temperature up to 325-350 degrees F. Make sure you have enough coals for a 4-6 hour cook.
2. Place roast on cutting board and coat liberally with olive oil.
3. Salt and pepper both sides to taste.
4. Chop onion and garlic clove, set aside.

MAKING

5. Place roast directly over hot coals to sear. Sear each side for 2 minutes then move opposite hot coals.
6. Place a large pot directly over hot coals.
7. Place roast in pot and season with garlic powder and Cajun seasoning.
8. Add in chopped onion and garlic; allow it to cook down.
9. Pour in beef stock; just enough to cover roast. Mix broth with other ingredients.
10. Cover grill and let roast simmer for 4-6 hours or until done.
11. Check broth level every hour or so to make sure the roast stays moist. Add broth as needed.
12. Maintain temperature by adding additional charcoal if needed.
13. When roast is tender and falling apart (approximately 5 hours), add gravy to pot.
14. Mix ½ cup of broth with flour and mix thoroughly. Pour into pot to thicken juices.
15. Add in 3 tablespoons (to taste) of kitchen bouquet to add color and flavor.
16. Mix thoroughly. Allow to cook another 5-10 minutes with the grill lid off.
17. Take spoon or fork and break roast apart to mix with gravy.

FINALIZING

18. Cut the baguettes length ways and open.
19. Apply mayonnaise to all pieces (optional).
20. Place tomatoes and lettuce on one side of each sandwich (or your favorite condiments).
21. Place roast on the other piece of bread to make the sandwich.
22. Put your baguettes together and place them indirect from coals to toast the bread.
23. Cover grill and allow bread to toast until desired doneness.

SERVING

24. Add other toppings like; cheese, onion slices, peppers or jalapenos.
25. Chips, cole slaw, baked beans for sides.
26. Sit back, relax, and enjoy!
