WallStreetNolez: Hmm... one telling me not hot enough, another saying it is too hot. \Well it seemed moist but not fall off the bone. I put in hot charcoal once like the video suggested about half way through. I Smoked it for about 5 hours. It was hard to control the temp though because it was indirect and it was like 105 degrees outside. It was good, but i had trouble mincing it. It was my first smoked butt so I'll take some extra steps next time. Thanks gusy.

The ingredients you'll need:

3 pounds potatoes
1/3 pound smoked bacon chopped
fresh eggs -hard-boiled
1 clove garlic minced
parsley fine chopped
1/4 cup onion chopped
1 tablespoon Dijon mustard
1/2 cup balsamic vinegar
1 tablespoon maple syrup
1/2 cup extra virgin olive oil
salt
pepper
