Nachos Supreme Meat Chili

Meat and Cheese, and a lot of it, make for a real good Nachos Supreme. If you feel that your restaurant is ripping you off with their plate of Nachos, then you have to check out this made from scratch meat chili and nachos recipe by the BBQ Pit Boys.

The ingredients you'll need:

THE MEAT SAUCE

  • Ground Beef Chuck – 3 lbs.
  • Sausage – 1 lb.
  • Jalapeno Pepper – 1 diced
  • Garlic – 2 cloves minced
  • Habanero Pepper – 1 seeded and diced optional
  • Onion – 1 medium diced
  • Tomato Paste – 2 6oz cans
  • Worcestershire Sauce – 2 Tbsp.
  • Chili Powder – 2 Tbsp.
  • Prepared Mustard – 2 Tbsp.
  • Celery Seed – 1 tsp
  • Cumin – 2 tsp
  • Salt – 2 tsp
  • Pepper – 2 tsp
  • Hot Sauce – 2 Tbsp.
  • Water – ½ cup
  • Beer – 12 oz.
  • Cooking oil
  • Large Pot

NACHOS AND TOPPINGS

  • Tortilla Chips – 1 bag
  • Shredded Cheese
  • Refried Beans – 2 cans
  • Black Olives – sliced
  • Green Onions or Scallions – thinly sliced
  • Tomatoes – diced
  • Jalapeno Pepper - sliced
  • Avocado – 1 cubed
  • Cilantro – chopped
  • Guacamole
  • Salsa
  • Sour Cream
  • Oven Safe Platter

DIRECTIONS

GETTING READY

1. Set up your grill for indirect heat (hot coals on one side of the grill and no coals on the other side of the grill)

MAKING

THE CHILI SAUCE

2. Place your pot over the hot coals
3. Add cooking oil to the pot
4. Place your medium diced onion and 2 cloves of minced garlic in the pot to sauté
5. After the onions have softened slightly add the following to the pot;

  • 3 lbs. ground chuck
  • 1 lb. sausage
  • 2 – 6 oz. cans Tomato Paste
  • 2 Tbsp. Worcestershire Sauce
  • 2 Tbsp. Chili Powder
  • 2 Tbsp. Prepared Mustard
  • 1 tsp Celery Seed
  • 2 tsp Cumin
  • 2 tsp Salt
  • 2 tsp Ground Pepper
  • 2 Tbsp. Hot Sauce
  • ½ cup Water
  • Diced Jalapeno Pepper
  • Diced seeded Habanero Pepper
  • 12 oz. Beer

6. Stir the mixture until mixed
7. You want the mixture to cook down until all the liquid is gone – about 1 hour
8. Stir occasionally and skim off any fat that has accumulated on the top

THE NACHOS

9. After the meat sauce has cooked down so the liquid is gone
10. Place a layer of Tortilla Chips on an Oven Safe Platter
11. Top the chips with a layer of Meat Sauce
12. Add dollops of refried beans on top of the meat sauce
13. Top with a layer of Shredded Cheese
14. Place another layer of Tortilla Chips on top of the cheese
15. Add another layer of Meat Sauce on top of the Chips
16. Top the meat sauce with more Refried Beans
17. Top everything off with another heaping layer of Shredded Cheese
18. Place the platter on the side of the grill with no coals
19. Cover grill with the lid and let the cheese melt

FINALIZING

20. After the cheese has melted remove the platter from the grill
21. Top the Nachos with

Chopped Tomatoes
Sliced Black Olives
Thin cut Green Onion
Jalapeno Slices
Avocado Cubes
Cilantro
Guacamole
Salsa
Sour Cream

22. You can add or delete whatever toppings you want. But this is the way we makem at the Pit.
