SCALLOPED POTATOES W/ BACON CHEESE & CHIVES

Potatoes make a great side dish. Hell, even a Vegematic will cheat to get a taste of this classic potato dish, bacon included! And it’s real easy to do!

THE INGREDIENTS YOU’LL NEED:

  • Cheese – 4 cups Sharp Cheddar, Jack or your favorite cheese
  • Butter – 1 stick
  • Half-and-half cream – 1 Quart
  • Smoked Bacon – ½ lb
  • Russet Potatoes – 3 to 4 lbs
  • Green Onions (Chives)
  • Parsley
  • Onion – 1 large
  • Salt
  • Ground Black Pepper
  • 12 Inch Black Iron Skillet
  • Tin Foil

DIRECTIONS
GETTING READY

1. Chop up your Bacon, Onions, Parsley and Chives
2. Slice your potatoes thin on a slicer or mandolin
3. Set up your grill for indirect heat (hot coals on one side of the grill and no coals on the other side of the grill) – You’re looking for a grill temperature of 350 degrees Fahrenheit.

COOKING

4. Place your skillet on the side of the grill with no coals
5. Grease the bottom and sides of the skillet with about 1 to 2 Tbs of butter
6. Build the first layer in the skillet

  • Place a layer of the thin sliced potatoes in the bottom of the skillet
  • Add Salt and pepper to the potatoes
  • Add about 1/3 of the onions to the skillet
  • Add some parsley and chives
  • Add smoked bacon pieces

7. Build the second layer in the skillet – just like the first layer putting down a layer of potatoes, salt, pepper, onions, chives, parsley and smoked bacon
8. Build a third layer in the skillet – just like the first 2 layers
9. Add a top layer of the sliced potatoes
10. Put 3 cups of shredded cheese on top of the potatoes
11. Pour 1 quart of Half and Half into the skillet
12. Add more smoked bacon
13. Cut up the remaining butter into pats and place over the cheese
14. Cover the skillet with foil this will allow the potatoes to cook
15. Place cover on grill – cook time will be about 1 ½ hours
16. After 45 minutes
Rotate the skillet 180 degrees so everything cooks evenly
17. After 1 hour
Remove the tin foil from the skillet – this will allow the remaining half and half to steam off
Add 1 cup of shredded cheese to the top of the potatoes
Rotate pan 180 degrees
18. At 1 ½ hours remove skillet from grill

FINALIZING

19. Cut and serve with a spatula
20. Add your favorite BBQ meat
