STEAMED CLAMS AND MUSSELS

This easy to do steamed clams and mussels recipe for the grill is great as a side dish or better yet as a main meal. This is some real good eating!

THE INGREDIENTS YOU’LL NEED:

  • Little neck clams
  • Steamer Clams
  • Mussels
  • Butter – 1 stick
  • Garlic – 2 cloves crushed
  • Beer – 2 or 3 oz you can substitute water
  • Black iron skillet
  • Black iron pot

FOR BREAD

French Bread Loaf
Garlic – 2 cloves smashed
Extra virgin Olive Oil
Shredded Cheese

DIRECTIONS
GETTING READY

1. Set the grill up for indirect grilling – hot coals on one side of the grill and nothing on the other side

COOKING

2. Place the skillet directly over the coals and add 1 stick of butter and 2 crushed garlic cloves into it
3. After butter is melted move the skillet to the side of the grill with no coals
4. Place your iron pot directly over the hot coals and load your mussels and clams into it
5. Pour 2 or 3 oz of water or beer into the pot to help steam the clams and mussels
6. Cover grill
7. After a couple minutes take the skillet with the garlic butter off the grill
8. Cut your French loaf in half and rub the smashed garlic onto the bread
9. Drizzle the bread with the Olive Oil
10. Top the bread with grated cheese
11. Place on the grill opposite the hot coals
12. Recover grill and steam clams and mussels til done – you will be able to tell when they are done because they will open up.

FINALIZING

13. Pour the melted butter on top of the clams reserving some for dipping sauce
14. Slice your garlic cheese bread
