STEELHEAD RAINBOW TROUT GRILLED FISH

Grilled sea-run Rainbow Trout marinated in soy sauce and maple syrup is not only good eating, but it’s real easy to cook on your barbecue grill.

THE INGREDIENTS YOU’LL NEED:

  • Steelhead rainbow steak — 3
  • Maple syrup — 1⁄2 Cup (8 tbs)
  • Soy sauce — 1⁄2 Cup (8 tbs)
  • Horseradish sauce — 2 Teaspoon

DIRECTIONS
PREPARATION

1) Into a bowl add the maple syrup and soy sauce and mix well
2) Into another bowl, add the fish and the marination reserving about 4 ounces to use for basting later
3) Ensure the fish is coated very well

MAKING

4) On a hot grill, heat the reserved sauce and reduce it to half and thickened slightly
5) Also add horseradish sauce to this and allow to simmer
6) Once thickened take off the grill and keep aside
7) Prep the grill by taking some olive oil and rub onto the grills to prevent the fish from sticking
8) Place the fillets of fish over directly over the grill
9) Sprinkle in some black pepper over the fish fillets
10) Cover the fish with the grill lid and cook the fish for about 10 minutes
11) Once 5 minutes are up, baste on some of the reduced sauce over the fish
12) Once the fish is cooked, take it off the grill and place on a plate
13) zip lock pouch, add the bison steak

SERVING

14) Serve the fish hot with some boiled vegetables
