BBQ FRIED RIBS

Watch the BBQ Pit Boys "low and slow" some St. Louis-style cut Spare Ribs, and then fry crisp them up just before serving

THE INGREDIENTS YOU'LL NEED:

  • Pork Spare Ribs – 5-6 lbs. St. Louis style
  • Rib Dry Rub – use your favorite rub
  • Onions – 3 large
  • Oil – ½ gallon
  • BBQ Sauce –3/4 cup – use your favorite

FOR ONION WASH:

  • Eggs – 2
  • Milk – ½ cup
  • Beer – to taste
  • Flour – 2-3 cups
  • FOR SERVING
  • Bbq Sauce
  • Onions
  • Cole Slaw

DIRECTIONS: GETTING READY

1. Bring grill temperature up to 250 - 275 degrees Fahrenheit, with coals offset for indirect cooking. 2. Trim excess fat from spare ribs. 3. Wash ribs and pat dry with paper towels. 4. Score membrane using a crossing pattern. You can also remove the membrane by pulling it off. 5. Apply a generous amount of rib rub to all sides of spare ribs. Be sure to coat edges, too. 6. Rub seasoning into ribs.

FOR ONION WASH:

7. Combine eggs, milk, and beer in a bowl and mix. 8. Peel onions and cut to form onion blossoms.

MAKING

9. Be sure to maintain grill at 250 – 275 degrees Fahrenheit. 10. Add a few pieces of hickory wood. 11. Place ribs on grill meat side up, opposite coals for indirect cooking. 12. Cover grill and cook an hour and a half. 13. Remove lid and slather ribs with your favorite BBQ sauce. 14. Rotate ribs for even cooking. Cover grill 15. Cook for another hour and a half, check ribs for doneness. Cover grill. 16. After another 30 minutes, pull ribs and allow them to rest while you set up fry station

FOR FRYING RIBS:

17. Heat ½ - 1 gallon of oil in a large pot. 18. Bring oil up to 350 – 375 degrees Fahrenheit. 19. Cut ribs into individual pieces. 20. Drop ribs into hot oil for 30 seconds to 1 minute. 21. Remove from oil.

FOR FRYING ONIONS:

22. Dust onions with flour through a sifter. 23. Place onion in wash, coat well and remove. 24. Dust onions again with flour. 25. Place onion in 350-375 degree Fahrenheit oil. 26. Cook to a golden brown or desired doneness. 27. Remove onions from grease and allow them to drain on paper towels.

FINALIZING

28. Place fried ribs on a large platter. 29. Place onions around ribs.

SERVING

30. Serve with cole slaw, fried onions, grilled corn on the cob. 31. Put your favorite bbq sauce on the side for dipping. 32. Sit back, relax, and enjoy!!
