Beef Bacon Breakfast Pie

A real quick and easy Beef Bacon Breakfast Pie with a kick, 20 or so eggs, pork belly bacon, beef bacon and a few roasted chilis. What a way to start your day if you’re camping, fishing or tailgating.

Beef Bacon Breakfast Pie

For this Beef Bacon Breakfast Pie recipe you need the following ingredients:
Pork Belly Bacon
Beef Belly Bacon
20 Eggs
Fresh Basil
Scallion / Spring onions
SPG Seasoning (use your favorite seasoning)
1 yellow bell pepper.
Fresh Chili’s, use your favorite chili’s

Method

First char-grill up the chilis whole to soften them up
Then grill the beef belly bacon and pork belly bacon over the open flame to add some smoky flavors, then move it all into a pan to finish frying it up until it has rendered off
the fat.
Save the pan juices, you’re going to cook the egg base in the bacon and beef fat
Whisk up a few of the eggs and add the beef and bacon fat to a pan.
We use a cast iron pan as it can hold a nice heat without the base burning as the remaining eggs cook to the soft consistency we were looking for.
Add the whisked eggs to the pan and pile on top the chopped scallion, fresh basil, Beef and Pork bacon, then add the remaining eggs and top with more chopped chili and the sliced bell pepper.
Place the pan onto a grill and close the lid to complete the bake. When the eggs are done to the consistency of your choice the pie is cooked.
* Alternatively, you may want to add some grated cheese topping, but go easy on the cheese topping so the eggs get a chance to cook though without burning the base.
Serve hot with your favorite sauce
