The BBQ Pit Boys smoke up some tender and juicy Beef Short Ribs at the Pit. And its real easy to do with these few simple tips.
Follow these easy instructions to cook these Beef short ribs
There's not much preparation to do, maybe remove some of the extra fat hanging off but basically keep it most of it there
Some pit masters will remove the fat and they will remove the silver skin too but we don't, just leave it on
The only thing you need to do really is to hit it with some seasoning, like some salt and pepper we used our SPG , it also has some coarse garlic in there a few other seasonings ,use what you like but you gotta season it
We used Apple-wood for the smoke, It's going to take about four, maybe five hours to cook these at about 250/260F (Thats 120 C/ 130 C for the old metric system)
Aim for an internal temperature of about 205 F ( 96 C )
You can even go higher and the reason is is because that's when the connective tissue and the collagen break down inside and makes these Beef ribs real tender.
These chuck short ribs can be mighty tough so you need to take the time and it might take four or five hours
Make up some beans.
We use regular canned beans and stick in some extra stuff, some onion, some garlic and just throw them in the pan and add dry mustard, about a tablespoon, add some brown sugar, maybe a quarter cup. We added some molasses too, maybe 1/4 cup plus about 1/2 a cup of ketchup.
Let the ribs rest for a while once they come off the grill, maybe fifteen minutes, that's all you need,it doesn't get any easier than that.
