For this Easy Bacon and Corn Chowder recipe you're going to need the following ingredients:
2 tablespoons of Cornstarch
Salt And Pepper Seasoning
5 cups of Chicken stock
Bacon as much as you like, the more the better
6 cups of canned corn, in brine
5 potatoes
Method
All these quanties are flexible, you cant really go wrong with chowder.
The bacon can be pre cooked or smoked first, if you pre-cook you will render of the fat, which we prefer to leave in for the flavor.
Dice the potatoes into small size cubes ( or precooked if you want) We find it's much faster, with the same result, just leave the skins on and drain off the water once cooked, it's not needed)
Add all the remaining ingredients, and include the corn brine for more corn flavor.
Simmer until the potatoes have blended in. Add the cornstarch to some of the chicken stock and stir it in.
Eat and enjoy!
