Kick up that ordinary Roast Chicken with this BBQ Pit Boys Ham and Cheese stuffed Chicken recipe. Its the perfect holiday meal to serve up at your Pit or for that any day special meal. And its real easy to do with these few simple tips.
Ham and Cheddar Chicken Recipe
A couple of Chickens,
some ham steaks, about 2 lbs (900 gms),
A leek,
An onion,
Sharp cheddar cheese,
4 oz (110 gms) Butter,
Celery,
1 tsp thyme,
Ground pepper,
1 tsp ground sage,
Olive oil,
4 oz of sun-dried tomatoes in oil,
1 quart ( 1000cc) of chicken stock,
1 1/2 pounds (680 grams) of croutons,
Directions
Chop up the celery and onion and leek combined all of it in a bowl with the sharp cheddar cheese.
Dice up about two pounds of ham steak, take out any of the fat from the ham steaks and add to the ham to the mix. Add 1 teaspoon crushed thyme and the 4 ounces of sun-dried tomatoes in oil,1 to 2 teaspoons of ground pepper and 1 teaspoon of ground sage
and then give it a good mix.
Heat up a pan add about four ounces of salted butter and two or three tablespoons of olive oil, melt down the butter and add the mixed ingredients cook down the celery the onions and leeks just a bit, bring it to a simmer and add the croutons.
Add about a quart of chicken stock, once its sufficiently heated up move it off the flame. Stuff the cavities of the chickens with the mix and season the birds
on the outside, we used our SPG ( Salt Pepper Garlic )
Cook Time and Temp
cook at 325f (162C) for about an hour and a half or until the internal temp of the breast meat reaches 165f ( 75 C)
You don't want to overcook them, when you take them off the grill, cover with aluminum foil for about 20 minutes to let them rest.
