Forget about putting pineapple ON the burger, stick it in the beef. The BBQ Pit Boys demonstrate this technique that adds a ton of pineapple flavor to your burger. Try it and youll never go back to the same ol, same ol way of grilling this classic bacon burger.
For these Pineapple Bacon Burgers we used the following ingredients:
Ground beef ( we used ground chuck )
Fresh pineapple rings
SPG seasoning
Smoked bacon
Rum
Butter
Method
First up smoke some bacon or use store bought smoked bacon, but cook it up first because it's gonna go on top of the cooked burger so choose your favorite still of cooking bacon . For some burger patties about 1/3 - 1/2 pound each.
Take the cored pineapple and slice thin slices, about 1/2 inch each. this is why fresh pineapple is best so you get to control the slice thickness.
Take the burgers and place a ring of pineapple on top and press it into the burger, be sure to press the sides of the burger beef up to cover the edges of the pineapple.
Flip the burger patty over and repeat so the pineapple is embedded on both sides.
Add a layer of your favorite seasoning on top, we used our SPG,
Place the burger OPPOSITE the hot coals on a medium heat, you want them to cook slowly so the beef doesn't pull away from the pineapple. Close the lid and let them cook, it wont take long so when you see the juices building up on top, flip them over to finish the cook.
The Sauce
Melt a couple of sticks of butter and add pineapple juice to the mix, then add some rum, use your favorite rum, Reduce the mix down over a medium heat to thicken. NOTE, depending on the pineapple you use you may need to add some sugar to get it to thicken up to the right consistency.
Once the burgers are done to an internal min temp 145f / 63 C , serve them up on a toasted bun with your favorite burger condiments and add the bacon on top.
