Real Tender Pork Loin Bacon Burger Recipe

Center Cut Pork Loin Bacon Eggs Bread rolls Scallion Mushrooms Cabbage Butter Garlic Jalapenos Mustard Mayonnaise Rice wine/ or cooking wine Cooking oil Hot sauce White pepper Black pepper Pickles / Gherkins.

Method

The key to this burger is the way we dice the pork loin. You want to slice it as close to the centre as possible, on both sides, this will open up the pork and allow for not only more flavor but speed up the cooking time. Use a cast iron skillet if you have one, or a pan will do, just make sure it's roaring hot. Dust the diced Pork Loins all over with the salt, black pepper and white pepper. (Remember with lean meats you need LESS salt to season) Add some vegetable oil, and place the pork loin onto the heat, flipping it a few times, then give it a squirt of water and place a pan lid on top immediately to trap the hot steam, repeat and flip often, alternate between the rice wine and water as often as it takes until done, then apply some of your favorite hot sauce. Every time you add the rice wine or water the pan / skillet temp will drop some you want to keep the heat up high or the pork loin won't end up as tender. This style of cooking meat originates from Japan and is known as Teppanyaki.

Toppings

Pan fry the toppings of your choice as you would normally. The Cabbage we sliced into long thin slices so it stays together on the burger better than if diced, add the mustard and mayonnaise and blend in the diced scallion / spring onions. Serve on a toasted bun.
