Bacon Sweet Cornbread

BACON SWEET CORNBREAD

Serving up Cornbread is a must at any barbecue but this old-time Sweet Cornbread that's filled with fresh bacon will bring tears to a grown man's eyes. And

THE INGREDIENTS YOU'LL NEED:

  • Thick Sliced Bacon – ½ lb
  • All Purpose Flour - 1 ¾ Cups
  • Baking Soda - ¼ tsp
  • Baking Powder - 1 ½ Tbs
  • Corn Meal – 1 cup
  • Brown Sugar – ¼ cup
  • Cane Sugar – ¼ cup
  • Salt – 1 pinch
  • Butter – 2 Tbs
  • Milk – 2 cups
  • Old Fashion Molasses – 1 tsp
  • Eggs – 3 fresh
  • Mixing bowls – 2
  • 12” Black Iron skillet – 1
  • Favorite Corn Bread Toppings

DIRECTIONS GETTING READY

1.Set up your grill for indirect heat – The grill temperature should be at 350 degrees Fahrenheit.

MAKING

2.Place your skillet on the grill over direct heat and put ½ lb of thick sliced bacon in it to cook – make sure to watch the bacon so it does not burn! 3.While bacon is cooking mix up your corn bread mix – for a better consistency you will make a dry mix and a wet mix separately then combine them at the end 4.Dry Mix - Into 1 mixing bowl combine;
  • 1 ¾ Cups All Purpose Flour
  • ¼ tsp Baking Soda
  • 1 ½ Tbs Baking Powder
  • 1 cup Corn Meal
  • ¼ cup Brown Sugar
  • ¼ cup Cane Sugar
  • Pinch of Salt
  • Mix all of the dry ingredients
5.Wet Mix – In a separate mixing bowl combine;
  • 3 Eggs
  • 1 tsp Molasses
  • 2 cups Milk
  • Mix all wet ingredients
6. Mix Wet and Dry mixes together by slowly adding the dry mix into the wet mix – whisking them together as you go. You are looking for the consistency of a light pancake batter. You may have to add more flour if it is to thin 7. After Bacon is cooked – remove from the skillet and place on a paper towel to remove excess grease 8. Move the Skillet adjacent to the coals for indirect heating and add 2 Tbs of butter to the bacon fat that is already in the skillet. 9. Cut up the Bacon into small bits – not to small ¼ to ½ inch pieces. When you bite into that Sweet Corn Bread you want a nice piece of Bacon 10. Pour Corn Bread mix into the Skillet and then add the Bacon into the mix 11. Mix the bacon into the corn bread mix. 12. It will take 30 minutes to cook – Depending on your grill temp. 13. After 15 minutes rotate the skillet so that you get an even cook on the corn bread 14. After 30 minutes check if Corn Bread is done – The best way to check for doneness is the tooth pick test: Stick a tooth pick into the corn bread in several places. If the tooth pick comes out clean with no batter sticking to it, your Sweet Corn Bread is done pull it off the grill

FINALIZING

15. Let the corn bread cool for about 30 minutes 16. Slice Corn Bread into wedges 17. Serve with Butter slathered on top – or your favorite topping like Maple Syrup
