\nBEEF AND BEANS MEATLOAF \n\nBEEF AND BEANS MEATLOAF\nMeatloaf Mexican style loaded with chorizo, onions, peppers, tomatoes, and some re-fried beans.\nTHE INGREDIENTS YOU'LL NEED:\n\n\tGround Chuck 80\/20 – 5 lbs.\n\tChorizo – 1 ½ lbs.\n\tRefried Beans – 16 ounce can\n\tTortilla Chips - 1\/8 cup crushed (substitute bread crumbs)\n\tEgg – 1\n\tBell Pepper – ¼ cup diced\n\tPoblano Pepper – ¼ cup diced\n\tOnion – ½ cup diced\n\tDiced Tomatoes with Chilies – 7 ounce can\n\tCumin – 2 teaspoons\n\tDried Oregano – 2 teaspoons\n\tChili Powder – 2 teaspoons\n\tSPG – 2 teaspoons\n\tBaking Sheet\n\nDIRECTIONS:\nGETTING READY\n1. Bring grill temperature up to 300-325 degrees Fahrenheit, with coals offset for indirect cooking.\n2. Chop peppers and onion; set aside.\n3. Remove chorizo sausage from the casing and put in large bowl with ground chuck.\n4. Add eggs, onions, peppers, and dried spices to bowl.\n5. Add diced tomatoes, tortilla chips, and refried beans.\n6. Using your hands combine thoroughly.\n7. Place on baking sheet and form into a meat loaf packing it tightly.\nMAKING\n1. Place baking sheet on grill opposite hot coals.\n2. Cook for approximately 1 hour, remove lid and rotate. Place cover back on grill.\n3. Cook for another hour or until internal temperature reaches 165 degrees Fahrenheit. .\nFINALIZING\n1. Remove meatloaf from grill and rest for 10 minutes.\n2. Slice meatloaf into serving size pieces.\n3. Place in soft tortillas, buns, or on a plate.\nSERVING\n1. Serve on a plate with mashed potatoes, baked beans, and cucumber salad.\n2. Sit back, relax, and enjoy!!
