Beef Jerky

BEEF JERKY

Perhaps the #1 working man's snack in the world, smoke dried beef is real easy to do on the grill or smoker. This is not your typical convenience store jerky.

THE INGREDIENTS YOU'LL NEED: FOR MARINADE

  • Onion Powder – 1 Tbs
  • Garlic Powder – 1 Tbs
  • Red Pepper Flakes – 1 Tbs Optional
  • Fresh Ground Black Peppercorn – 1 Tbs
  • Soy Sauce – 1 ½ cups
  • Worchester sauce – 1 ½ cups

FOR THE JERKY

  • Bottom Round Roast – 5 lbs or Steak – 5 lbs about 1 ½ to 2 inches thick
  • Sharp Knife
  • Bowl
  • Paper Towels

GETTING READY

1. Place your roast and/or steak into the freezer – This helps firm up the meat and make it easier to slice – About 10 minutes is all you need, which gives you time to make the marinade

THE MARINADE

  • 2. Into a bowl mix the following;
  • Soy Sauce – 1 ½ cups
  • Worchester Sauce – 1 ½ cups
  • Onion Powder – 1 Tbs
  • Garlic Powder – 1 Tbs
  • Ground Peppercorn – 1 Tbs
  • Red Pepper Flakes – 1 Tbs Optional

THE JERKY

3. For the steak cut into slices that are 1/8th to ¼ inch wide (slice with the grain) 4. For the Roast cut into 1 ½ to 2 inch slabs then cut these into 1/8th to ¼ inch slices 5. Place the slices into the marinade and let sit at least 4 hours up to 24 hours in the refrigerator 6. Set up your grill for indirect heat (hot coals on one side of the grill and no coals on the other side of the grill) – You’re looking for a grill temperature of 140 to 150 degrees Fahrenheit.

DIRECTIONS COOKING

1. Remove the Jerky slices from the marinade and dry with a paper towel 2. Place the jerky slices on the side of the grill with no coals for low and slow indirect cooking 3. You can also cook this Jerky in a smoker just do not put any water into the water pan 4. You are looking at a cook time of 6 hours

FINALIZING

5. After 6 hours take the jerky off the grill, store in the refrigerator
