Chicken Dragon Eggs

No Eggs required for these bacon wrapped jalapeno popper stuffed chicken breasts. Watch the BBQ Pit Boys Pitmaster of the Joseph-Que Chapter put these together using these simple tips.

Ingredients

  • Skinless boneless chicken breast
  • Pork belly bacon
  • Cream cheese
  • Shredded cheddar cheese
  • Seasoning
  • Green jalapenos peppers

Directions

  1. Cut the jalapenos in half and remove the seeds and inner stem.
  2. Butterfly the chicken breast. Now place a plastic wrap over the spread chicken and flatten it out with a mallet.
  3. Fill both the hollowed out jalapeno with cream cheese, add a good layer of shredded cheese on top and join the halves together. You now have a perfect dragon egg.
  4. Place the dragon egg in middle of the flattened chicken and wrap the meat.
  5. Now take a strip of pork belly bacon and start wrapping it tight around the chicken dragon egg. Keep doing it till the entire bacon strips are wrapped. Trim up the edges if you want to.
  6. Now take your favorite seasoning and rub it all over the bacon wrapped chicken.
  7. Place the bacon wrapped chicken over indirect heat. You want the internal temperature of about 165F.
  8. You may baste some sauce in middle of the grilling and do it several times in the grilling process.
  9. Pull it off the grill and let it set for a few minutes.
