1. Set up your grill for indirect heat (hot coals on one side of the grill and no coals on the other side of the grill)
2. In a bowl mix the following ingredients
Mayonnaise – ½ cup
Garlic cloves – 2 minced
Cayenne Pepper – 1 tsp
Green onions – 2 tsp finely diced
Lemon juice – 1 or 2 tsp to taste
Eggs - 2
3. Mix the above ingredients until they are incorporated
4. Add the 1 ½ cups of Panko Bread crumbs to the bowl. Mix together If your consistency of the mixture seems to
runny and does not hold together you can add more Panko
5. Add 2 tsp of melted butter to the bowl and mix
6. Add your crab meat to the bowl and mix together with your hands being careful not to break up the lump crab meat.
7. Form the mixture into balls about the size of a billiards or tennis ball
8. Press these balls down into burger shape
MAKING
9. Place the Skillet directly over the hot coals and coat the pan with melted butter
10. After skillet is heated place the crab cakes into the skillet
11. Cook time will be about 15 minutes depending on the heat of your grill. You want an internal temperature of 150 degrees fare height for the crab cakes to be done
12. After 5 or 6 minutes flip the cakes over. If your crab cakes are cooking unevenly you can rotate the skillet to help them cook evenly
13. After 15 minutes remove the cakes from the grill.
FINALIZING
14. Place Crab Cake on a bun add tater sauce or your favorite condiment
15. Or put on a plate and pour the rest of the melted butter into a small bowl for dipping.
