Crispy Fried Shrimp

Ingredients
- Medium Peeled Shrimp, tail on
- 3/4 cup cornstarch or potato starch
- 2 tsp White pepper powder
- 1 tsp Salt
- 6 Fresh red chilis
- 6 cloves fresh garlic
- 2 Tbsp. smoked paprika
- 2 Tbsp Fried shallots
- Cooking oil
Directions
- Combine the washed shrimp, there's no need to dry them off, some water will help the starch stick. The amount required depends on the amount you're making.
- Slice the fresh chilis and into a sieve add the fresh garlic and deep fry in oil at 375 f for about 15 seconds only.
- Fry the shrimp in small batches @ 375 f, don't add to many at one time as they will stick together. When they're golden colored they are cooked.
- Place the cooked shrimp into a large bowl and add the fried garlic and chilis, white pepper powder, some salt to taste, the smoked paprika and dried fried shallots, toss until well coated.
- Serve hot.
