Crispy Fried Shrimp
This simple CRISPY FRIED SHRIMP technique is outstandingly good using the most basic of ingredients, plus it doesn't take long to get results that will blow you mind.
Medium Peeled Shrimp, tail on
3/4 cup cornstarch or potato starch
2 tsp White pepper powder
1 tsp Salt
6 Fresh red chilis
6 cloves fresh garlic
2 Tbsp. smoked paprika
2 Tbsp Fried shallots
Combine the washed shrimp, there's no need to dry them off, some water will help the starch stick. The amount required depends on the amount you're making.
Slice the fresh chilis and into a sieve add the fresh garlic and deep fry in oil at 375 f for about 15 seconds only.
Fry the shrimp in small batches @ 375 f, don't add to many at one time as they will stick together. When they're golden colored they are cooked.
Place the cooked shrimp into a large bowl and add the fried garlic and chilis, white pepper powder, some salt to taste, the smoked paprika and dried fried shallots, toss until well coated.
This amount of each of the seasonings depends on you, as the dry seasonings are added at the end of the cook, taste test one and add more according to your taste, you really can't go wrong.
