Crispy Grilled Chicken

CRISPY GRILLED CHICKEN

Crispy, moist and tender chicken from the grill is easy to do especially with this apple cider and brown sugar brine recipe put together by the BBQ Pit Boy

FOR BRINE

  • Apple Cider – ½ Gallon, you could also use orange juice, apple juice, soda, wine, beer, soy sauce or any other liquid you would like
  • Kosher Salt – 1/3 cup
  • Brown Sugar – 1/3 cup
  • Ground Black Pepper – 1 Tbs
  • Poultry Seasoning – 2 tsp
  • Garlic Cloves – 2

FOR CHICKEN

  • Chicken Breast halves – 3 lbs, about 4 pieces
  • Butter – 1 stick
  • Corn Flakes – 2 cups
  • Bowl – for brining so needs to be large enough to hold brine and chicken pieces, a large Plastic bag will also work
  • Large sealable Plastic bag – to crush corn flakes in
  • Iron pot
  • Plastic wrap
  • Paper Towels

DIRECTIONS GETTING READY MAKING THE BRINE

1. Place your pot over medium heat 2. In your pot combine the following;
  • pple Cider – 1 cup
  • Kosher Salt – 1/3 cup
  • Brown Sugar – 1/3 cup
  • Fresh Ground Pepper – 1 Tbs
  • Poultry Seasoning – 2 tsp
  • Crushed Garlic Cloves - 2
3. Heat and stir the brine until all the sugar is dissolved

THE CHICKEN

4. Place the chicken pieces into the bowl 5. Pour the brine from the pot over the chicken 6. Add Apple Cider to the bowl until the chicken is totally covered 7. Cover bowl with plastic wrap and place in the frig or cooler for 1 Hour

THE COATING

8. Place 2 cups of corn flakes into a sealable plastic bag 9. With your hands or a rolling pen, etc. crush the corn flakes into medium to large pieces

THE GRILL

10. Set up your grill for indirect heat (hot coals on one side of the grill and no coals on the other side of the grill) – You’re looking for medium hot coals with a temp. about 350 Fahrenheit.

MAKING

11. After Chicken has brined for 1 to 1 ½ hours 12. Place 1 stick of butter in a clean pot and place on the grill to melt the butter 13. Remove a piece of the chicken from the brine and dry off with a paper towel – You want the chicken dry so that the butter will stick to it. 14. Put the chicken in the pot and coat with melted butter 15. Then place the butter coated chicken piece into the plastic bag of crushed corn flakes. 16. Move the piece around until totally coated with the corn flake coating 17. Repeat the process with the other pieces of chicken – If cooking for a large group or a tailgate this can be done ahead of time, adjust the ingredient amounts accordingly 18. Place the chicken on grill for indirect heating – Side of grill with no coals on it 19. Pour excess corn flake coating in the plastic bag over the chicken. 20. Cover the grill with the lid. You will have a 45 minute to 1 hour cook time depending on your grill temp. 21. After 20 minutes
    • Rotate the chicken 180 degrees for even cooking
    • You also want to move the chicken around on the grill because of hot spots
22. After 45 Minutes check the chicken with an instant read thermometer – You are looking for a temperature of 180 degrees Fahrenheit
