\nFish Breakfast \n\nFISHERMENS BREAKFAST FISH\nThere's nothing better tasting hot off of the grill than some fresh caught fish... served with sides of fresh eggs and bacon!\nTHE INGREDIENTS YOU'LL NEED:\n\n\tTrout – 5 or 6\n\tBacon – 1 lb thick sliced\n\tOnion – chopped\n\tGarlic – minced\n\tScallions – diced\n\tSeafood Rub\n\tButter\n\tEggs – 1 dz\n\tTin Foil\n\tBlack iron skillet – 2\n\nDIRECTIONS\nGETTING READY\nCLEANING THE FISH\n1. Slice each fish open from the bung hole by the tail up to the gills – you want to keep your knife shallow and not to deep so that you do not cut open the entrails\n2. Clean out the entrails on each fish\n3. Rinse the fish off\n4. You now need to remove the large blood vessel that runs along the spine inside the fish cavity\n5. Run your thumb nail up and down this blood vessel until removed\n6. Rinse the fish again\n7. Set up your grill for indirect heat (hot coals on one side of the grill and no coals on the other side of the grill) –\nMAKING\nFOIL BAKED TROUT\n8. In a 12” skillet fry up the bacon\n9. Place a trout on a piece of tin foil\n10. Sprinkle seafood rub into cavity\n11. Stuff the cavity of the fish with a slice of bacon, scallions, onion, garlic and add butter\n12. Wrap tightly in the foil\n13. Cook time will be about 15 minutes depending on your grill temp.\nPAN FRIED TROUT\n14. Grease up a skillet or grill pan with butter, place directly over the hot coals\n15. Lay your fish onto the griddle\n16. Sprinkle with rub and lay some bacon across the fish\n17. It will only take a couple of minutes per side to cook the fish\n18. To control the temp you can move the skillet to the side of the grill with no coals\n19. After a few minutes per side remove the skillet from the grill – the fish will continue to cook from the heat of the pan\nTHE SCRAMBLED EGGS\n20. In a black iron skillet put your cooked diced bacon, chopped scallions, minced garlic, and chopped onion\n21. Crack the eggs into a bowl and scramble\n22. After the veggies have sautéed for a couple of minutes – pour the eggs into the skillet\n23. Constantly stir the eggs to mix and make sure it does not burn\n24. Cook until eggs are done\nFINALIZING\n25. Place a trout on your plate and add a guud helping of scrambled eggs\nSERVING\n26. Serve and Enjoy!
