Grilled Jalapeno Poppers

GRILLED JALAPENO POPPERS PEPPERS

Try these delicious and real easy to do Jalapeno peppers, stuffed with Romano and Jack cheese, wrapped in bacon and grilled.

THE INGREDIENTS YOU'LL NEED:

INGREDIENT AMOUNTS DEPEND ON HOW MANY POPPERS YOU ARE MAKING.
  • Fresh Jalapeno Peppers – the larger the better because you are going to stuff them. Make sure you get plenty because they are going to go fast and you want to make sure you get some.
  • Onion – finely chopped
  • Shredded Cheese – Romano works great but you can use a sharp cheddar (the sharper the better) because it complements the heat of the Jalapenos
  • Shredded Jack cheese
  • Bacon – thick or thin a basic cut of Bacon will really work good
  • Toothpicks
  • Mixing bowl

DIRECTIONS PREPARING THE JALAPENOS FOR STUFFING

1. Slice open the Jalapenos by cutting a side off – just cut off enough to open the pepper up so you can remove the seeds and white meat. 2. Scrap out the seeds and white meat into a bowl using the back side of a spoon. The real heat of the jalapeno comes from that white meat and not so much the seeds. We will add some of this white meat back into our cheese stuffing.

MAKING THE CHEESE STUFFING

3. In a mixing bowl add: The jalapeno sides you trimmed off – finely chopped Minced Onions – To Taste The white meat removed from Jalapenos – To Taste, be careful on how much you add, all your heat comes from the white meat Shredded Romano Cheese or your favorite cheese Shredded Jack Cheese 4. Mix all stuffing ingredients together

MAKING THE POPPERS

5. Open your Bacon and cut it in half – you will only need a half of slice per popper 6. Stuff each popper with the cheese mixture – stuff them pretty tight 7. After stuffing wrap each Jalapeno with a half slice of the bacon – if needed you can use the toothpicks to hold the bacon on

COOKING THE POPPERS

8. Set up your grill for indirect cooking – hot coals all on one side of the grill and no coals on the other side 9. Place your poppers on the side of the grill with no coals – Indirect Heating 10. Cover and in 15 to 20 minutes your poppers will be ready – depending on your grill temp.
