Grilled Pepper Chicken
This simple to prepare but delicious grilled chicken, hand rubbed with mayo and assorted spices makes for some real good eating!
THE INGREDIENTS YOU'LL NEED:
- Chickens whole fryers –(2) – 3-4lbs. each
- Mayonnaise
- Paprika
- Chili powder
- Pepper
- Poultry seasoning
- Granulated onion
- Granulated garlic
- Cumin
- Kosher salt
DIRECTIONS:
GETTING READY
1. Bring grill temperature up to 375 - 400 degrees Fahrenheit. Coals to one side for indirect cooking.
MAYO CHICKEN RUB:
2. Place 1 cup mayonnaise in a bowl.
3. Add in Black pepper – 2 teaspoons.
4. Add in Paprika – 1 teaspoon.
5. Add in Chili powder – 1 teaspoon.
6. Add in Poultry seasoning – 1 teaspoon.
7. Add in Granulated garlic – 1 teaspoon.
8. Add in Granulated onion – 1 teaspoon.
9. Add in Kosher salt – ½ teaspoon.
10. Add in Cumin – pinch (to taste)
11. Mix well.
MAKING
12. Place mayonnaise rub all over each whole chicken. Be sure to coat generously, especially under the skin.
13. Put chickens opposite hot coals, breast side up. Cover grill.
14. Cook for 35-45 minutes. Remove lid and turn each chicken for even cooking. Place lid on grill and cook for additional 35-45 minutes.
15. Check internal temperature with an instant read thermometer. Temperature should be between 180-185 degrees Fahrenheit.
FINALIZING
16. Remove chickens from grill.
17. Cover with foil and let rest for 15 minutes.
18. Take knife and cut down breast bone.
19. Figure on a ½ chicken per person.
SERVING
20. Grilled red potatoes, salad.
21. Sit back, relax, and enjoy!!
