High quality natural meat sausage is hard to come by, so when ya can get some, ya make a rope or two of white tail Deer Sausage and stock your freezer.

Ingredients
- ​4 pounds of ground venison
- ​1 lb pork Fat​
- Natural sausage casing
- 1/2 a​ ​cup of olive oil
- 1 ​ ​Tbsp of ​ghost pepper flakes or red ​chili ​pepper
- ​1 Tbsp​ of cayenne pepper

​2 ​ ​Tbsp of SPG​ ( our Salt pepper garlic seasoning ) ​
- 3​ ​​ ​Tbsp of fennel seed​,
- 1 ​ Cup of​ ​sharp shredded cheddar cheese
- 1/2 ​ ​Tbsp of allspice
- 1 ​ ​Tbsp of​ ​ground mustard
- ​1 ​Tbsp​ of smoked​ ​paprika
- 1/2 cup of brown sugar
- 1/2 cup​ ​of red sherry wine
- 3 tablespoons of minced garlic
- 1/2 a cup​ ​of chopped onions
