Ingredients

  • ​4 pounds of ground venison
  • ​1 lb pork Fat​
  • Natural sausage casing
  • 1/2 a​ ​cup of olive oil
  • 1 ​ ​Tbsp of ​ghost pepper flakes or red ​chili ​pepper
  • ​1 Tbsp​ of cayenne pepper
  • ​2 ​ ​Tbsp of SPG​ ( our Salt pepper garlic seasoning ) ​
  • 3​ ​​ ​Tbsp of fennel seed​,
  • 1 ​ Cup of​ ​sharp shredded cheddar cheese
  • 1/2 ​ ​Tbsp of allspice
  • 1 ​ ​Tbsp of​ ​ground mustard
  • ​1 ​Tbsp​ of smoked​ ​paprika
  • 1/2 cup of brown sugar
  • 1/2 cup​ ​of red sherry wine
  • 3 tablespoons of minced garlic
  • 1/2 a cup​ ​of chopped onions
