High quality natural meat sausage is hard to come by, so when ya can get some, ya make a rope or two of white tail Deer Sausage and stock your freezer.

- 4 pounds of ground venison
- 1 lb pork Fat
- Natural sausage casing
- 1/2 a cup of olive oil
- 1 Tbsp of ghost pepper flakes or red chili pepper
- 1 Tbsp of cayenne pepper

2 Tbsp of SPG ( our Salt pepper garlic seasoning )
- 3 Tbsp of fennel seed,
- 1 Cup of sharp shredded cheddar cheese
- 1/2 Tbsp of allspice
- 1 Tbsp of ground mustard
- 1 Tbsp of smoked paprika
- 1/2 cup of brown sugar
- 1/2 cup of red sherry wine
- 3 tablespoons of minced garlic
- 1/2 a cup of chopped onions
