LOBSTER STUFFED FILET MIGNON STEAK

For a special holiday try this grilled Beef Tenderloin Steak, stuffed with Lobster, and covered with a Whiskey Peppercorn sauce.

THE INGREDIENTS YOU'LL NEED:

  • 1 lobster -about 2 pounds, steamed
  • beef tenderloin steaks -about 4lbs
  • cooking oil
  • 2 tablespoons minced green onion
  • 2 tablespoons minced garlic
  • 2 tablespoons minced celery
  • breadcrumbs
  • grilled bacon
  • hot sauce
  • butter
  • water

Whiskey Peppercorn Sauce:

  • 1 cup beef broth
  • 2 tablespoons fresh ground pepper
  • 1 cup heavy cream
  • one shot or more of your favorite whiskey
  • salt

DIRECTIONS MAKING

1) Rub the chuck roast with salt, pepper and olive oil 2) Make pockets in the beef filets 3) From the lobster tail, take out the meat and chop into large chunks 4) Meanwhile smoke up the slices of bacon 5) In a pan, sauté the scallion, onion, celery and minced garlic 6) Tip in the breadcrumbs and cook further 7) Add a little water and hot sauce to bind it out, stir well 8) Add the lobster chunks and heat a little 9) Take the pan off the heat and keep aside 10) Into another pot, pour in the beef broth and add the fresh black pepper to it, reduce the broth 11) Season the broth with salt 12) Add the whiskey and heavy cream and reduce the liquid and keep aside once done 13) Into the beef filet pocket, fill about a tablespoon of the lobster meat 14) Fasten the opening with a slice of bacon and secure with toothpicks 15) Repeat with the other pieces of steaks 16) Place the steaks onto the grill 17) Cook for about a minute or two on each side 18) Then place on indirect heat and cover the grill for about 40 minutes till the meat is cooked 19) Once the meat is cooked, take off the grill

SERVING

20) Serve the filet mignons with the whiskey sauce
