PEPPERONI CLAMS AND MUSSELS SEAFOOD

Fresh steamed clams and mussels covered with slices of pepperoni and garlic in a butter sauce makes for a tasty side dish for most anything barbecue. And it's real easy to do on the grill as shown by the BBQ Pit Boys.

THE INGREDIENTS YOU'LL NEED:

  • Clams – 7 lbs.
  • Garlic 12 cloves thinly sliced
  • Pepperoni – 1 lb. chopped
  • Butter – ¼ lb.
  • Cooking Oil
  • Beer – 8 oz.
  • Water – ½ cup
  • Lemon - 1
  • Large pot with lid
  • Black iron skillet

DIRECTIONS GETTING READY

1. Set up your grills for indirect grilling. Place hot coals on 1 side of the grill and no coals on the other side of the grill.

COOKINGM

2. Place your clams in the large pot and set aside 3. Place the skillet directly over the hot coals 4. Coat the skillet with cooking oil 5. Place the sliced Garlic and diced pepperoni in the skillet to start cooking 6. After a few minutes add ¼ butter to the skillet 7. Move the skillet to the side of the grill with no coals 8. Put the pot of clams on the grill directly over the hot coals 9. Add 8 oz. of beer to the pot 10. Add ½ cup water to the pot 11. Place the lid on the pot and steam the clams 12. Steam the clams until they open up 13. Pour the clams into a large bowl

FINALIZING

14. Squeeze the juice of 1 Lemon over the clams 15. Pour the Garlic, Pepperoni and Sauce mixture over the clams

SERVING

16. Serve and Enjoy!
