Pepperoni Pizza Meatloaf Roll
4lb Ground Beef Chuck 80 /20 fat ratio
First thing you got to do is turn the ground beef into a pizza base about a half inch three quarter inch thick
Season the ground beef, we're using some of our spg use at least some salt and pepper.
Fry up the pepperoni , onions mushrooms minced garlic onto the meat pizza base add a layer of shredded mozzarella cheese and or grated parmesan cheese
Add some pizza sauce and then all your toppings from the pan.
Take a couple of slices of white bread and cut it into cubes then add the bread into a bowl with a splash of beer, and place onto the toppings. This is going to add some moisture to the cook
Roll the meatloaf up and drape it with pork belly bacon and add on some more cheese and place on a baking sheet then onto the grill or oven over indirect heat at 325- 350 F to cook.
It's going to take about an hour about halfway through your cook you might have to flip it around to get some even cooking, if you do this in your kitchen oven or your wood fired oven you won't have to rotate it.
