This sweet, smoky blend of chili peppers, savory spices and herbs gives meat a bold, flavorful crust that seals in juices.
THE INGREDIENTS YOU'LL NEED:
Pork spare ribs – 5-6 lbs.
McCormick Pork Grill Mates Dry Rub – 1 jar, (2 Tablespoons per pound of ribs)
Light brown sugar – 1 lb.
Favorite sauce for mopping (apple juice or apple cider) – 16 oz.

DIRECTIONS:
GETTING READY
1. Bring grill temperature up to 225 - 250 degrees Fahrenheit, with coals offset for indirect cooking.
2. Place pan filled with water under cooking grate opposite coals.
3. Wash ribs with water and pat dry with paper towels.
4. Trim excess fat from spare ribs.
5. Score membrane using a crossing pattern. You can also remove the membrane by pulling it off.
6. Apply a generous amount of McCormick Pork Grill Mate Rub to all sides of spare ribs. Be sure to coat edges, too.
7. Put ribs in a container and place in a cooler or refrigerator for 2-3 hours.
8. Remove ribs and apply a liberal coating of the brown sugar to all side of ribs.
9. Add another coating of McCormick Pork Grill Mate Rub on top of brown sugar.
MAKING
10. Be sure to maintain grill at 225 – 250 degrees Fahrenheit.
11. Add a piece of hickory wood for a light smoke.
12. Place ribs on grill meat side up, opposite coals for indirect cooking.
13. Cover grill and cook 45 – 60 minutes. Remove lid and mop ribs with your favorite mopping sauce. Cover grill.
14. After another 45 – 60 minutes, mop again.
15. After two hours, flip and turn ribs for even cooking (bone side up). Mop and cover grill.
16. Wait 45 – 60 minutes and mop again.
17. In another hour, ribs will be done. 4 hours total cook time.
FINALIZING
18. Remove ribs from grill.
19. Cut ribs into sections for serving.
SERVING
20. Sprinkle ribs again with McCormick Pork Dry Rub
21. Put your favorite bbq sauce on the side
22. Sit back, relax, and enjoy!!
