POTATO STEAK STEW
Short days and cold nights gettin' to ya? Then try this BBQ Pit Boys Beef Steak Stew, slow simmered and served with Mashed Potatoes. It's guuud!
THE INGREDIENTS YOU'LL NEED:
- Potatoes – 4 to 5 lbs
- Ribeye – 4 lbs steaks or roast
- Butter – 1 stick
- Carrot – 1/3 to ½ cup peeled and sliced
- Celery – 1/3 to ½ cup chopped
- Salt – to taste
- Pepper – to taste
- Beef broth – 6 to 8 cups
- Onion – 1 large chopped
- Lemon – 1 Tbsp. of juice
- Worcestershire sauce – 1 Tbsp.
- Allspice – ½ tsp
- Bay Leaves – 2
- Pots – 2 large
DIRECTIONS
GETTING READY
1. Set up your grill for indirect heat (hot coals on one side of the grill and no coals on the other side of the grill) – You’re looking for a grill temperature between 400 to 450 degrees Fahrenheit.
2. Set one of your pots with the beef broth on the grill on the side with no coals to start heating
3. Prepare and chop up your carrots and celery. Then add them to the pot of broth..
4. Add ½ tsp of Allspice to the pot
5. Squeeze 1 Tbsp. of lemon juice to the pot
6. Add 1 Tbsp. of Worcestershire sauce to the pot.
7. Add the 2 bay leaves to the pot.
8. Put the lid on the pot and set on a side burner to simmer
9. Cut your roasts into 1 inch thick steaks.
MAKING
10. Salt and pepper each side of the steaks
11. Place the steaks on the grill directly over the hot coals. You just want to sear the steaks not cook them all the way thru
12. Sear for 2 minutes then flip the steak over and sear the other side for 2 minutes
13. Remove the steaks from the grill and cut into 1 inch cubes.
14. Add the steak cubes into the simmering pot of stew.
15. You want to let the stew to low simmer for 3 to 4 hours with the lid on.
16. While the stew is simmering cut up your potatoes into chunks and put them into the 2nd pot with water to boil.
17. After the potatoes are tender, remove the pot from the heat and drain off all of the water from the potatoes
18. Add the butter to the potatoes and salt and pepper to taste. For smoother and creamier potatoes you can add some milk or cream cheese if you want.
19. Mash the potatoes to the consistency that you like.
FINALIZING
20. After 3 or 4 hours your stew will be done
21. Place a ring of mashed potatoes on a plate forming a bowl to ladle the stew into
22. Fill the created bowl with the stew and sauce
