RIB STEAKS AND BACON POTATO BOMBS

It’s the classic Steak and Potatoes meal cranked up BBQ Pit Boys style. This video shows in detail how to make our now infamous BBQ Pit Boys Bacon Potato Bombs, and serve ‘em with thick cut Rib Steaks cut off a 12lb. Rib Roast. Warning: this video is about 15 minutes long so grab a cold one and a peanut butter sandwich.

THE INGREDIENTS YOU'LL NEED:

  • Rib Roast – 6 lbs. (3 ribs, choice)
  • Olive Oil – 3-4 Tablespoons
  • SPG – to taste
  • Instant Read Thermometer
  • Aluminum Foil

POTATO BOMBS:

  • Russet Potatoes – 5 large
  • Bacon – 1 pound (pork belly style)
  • String Cheese – favorite kind
  • Sausage – frozen breakfast links
  • Butter – 1 stick
  • SPG – to taste
  • Aluminum Foil

DIRECTIONS:

1. Bring grill temperature up to 325-350 degrees Fahrenheit.

GETTING READY PREPARE POTATO BOMBS:

1. Core the center out of each potato using an apple corer. Reserve core for later use. 2. Insert a breakfast sausage link into each potato. You can use your favorite ingredients. 3. Stuff with cheese. 4. Take the potato core and slice enough from each end to plug the ends of the potato. 5. Wrap each potato with bacon. 6. Apply SPG to taste. 7. Place potato in a piece of aluminum foil, cut a pat of butter and place on top of potato and wrap.

PREPARE ROAST:

1. Take a sharp knife and cut the rib roast into three rib steaks. 2. Coat each steak with olive oil. 3. Apply SPG liberally to both sides of steaks.

MAKING FOR POTATO BOMBS:

1. Place potatoes on grill for 60 – 90 minutes to cook. (These can be baked in the oven on a sheet pan) 2. After 30-45 minutes, turn potatoes for even cooking. 3. Remove and set aside when they are done.

FOR STEAKS:

1. On a separate grill, bring the temperature up to 325-350 degrees Fahrenheit or medium heat with coals set for indirect cooking. 2. Place steaks directly over medium coals for slow, even cooking. 3. Place lid on grill and cook for 10 minutes. 4. After 10 minutes, remove cover and flip steaks to seer other side. 5. Cover and cook another 10 minutes. 6. Remove lid and move steaks to indirect cooking. 7. Cover grill and cook steaks until internal temperature reaches your desired doneness. 125 – 135 degrees Fahrenheit for rare to medium rare. Use an instant read thermometer for checking temperature.

FINALIZING

1. Remove steaks from grill and allow to rest for 10-15 minutes. 2. Unwrap potatoes and cut in half for serving.

SERVING

1. Serve with sautéed mushrooms and onions, mashed potatoes, or baked beans. 2. Sit back, relax, and enjoy!!
