SCALLOPED POTATOES W/ BACON CHEESE & CHIVES
Potatoes make a great side dish. Hell, even a Vegematic will cheat to get a taste of this classic potato dish, bacon included! And it's real easy to do!THE INGREDIENTS YOU'LL NEED:
- Cheese – 4 cups Sharp Cheddar, Jack or your favorite cheese
- Butter – 1 stick
- Half-and-half cream – 1 Quart
- Smoked Bacon – ½ lb
- Russet Potatoes – 3 to 4 lbs
- Green Onions (Chives)
- Parsley
- Onion – 1 large
- Salt
- Ground Black Pepper
- 12 Inch Black Iron Skillet
- Tin Foil
DIRECTIONS GETTING READY
1. Chop up your Bacon, Onions, Parsley and Chives 2. Slice your potatoes thin on a slicer or mandolin 3. Set up your grill for indirect heat (hot coals on one side of the grill and no coals on the other side of the grill) – You’re looking for a grill temperature of 350 degrees Fahrenheit.COOKING
4. Place your skillet on the side of the grill with no coals 5. Grease the bottom and sides of the skillet with about 1 to 2 Tbs of butter 6. Build the first layer in the skillet- Place a layer of the thin sliced potatoes in the bottom of the skillet
- Add Salt and pepper to the potatoes
- Add about 1/3 of the onions to the skillet
- Add some parsley and chives
- Add smoked bacon pieces
