Screwed up Pork Chops

Stuffed pork chops just got a whole lot easier with twice the filling using this simple and effective technique.

  • Bacon
  • Shredded Cheese
  • Rosemary
  • Garlic cloves
  • Challots
  • Mushrooms
  • Pork Privilege
  • 3 bone in pork chops

Directions

  1. Smash some garlic cloves and dice up some shallots and slice up some mushrooms.
  2. Grill up or fry your bacon
  3. In a frying pan with a bit of oil in it throw in the rosemary, garlic, mushrooms, shallots and a 1/4 stick of butter and season with salt and pepper and fry till the mushrooms have browned. Remove and set aside.
  4. Chop up the bacon your grilled earlier.
  5. Take the pork chops and butterfly them so you can open them up and stuff them.
  6. Rub both outsides of the pork with some oil and season with pork privilege seasoning.
  7. Stuff the pork chop with some of the mushroom mix you made earlier. After stuffing you can tie them closed with butcher twine or like we do in the video screw them shut to a piece of wood with stainless steel screws. 
  8. Cook by indirect heat on your grill for about 40 minutes or until the pork is at least 150f.
  9. Top with some cheese and chopped bacon just before done. And cook for a bit to let the cheese melt.
  10. Slice and enjoy!
