SHRIMP & CRAB STUFFED FISH WITH LOBSTER GRAVY -PART ONE
In this video a Pit Boys Lobster Gravy and Seafood Stuffing for Fish fillets are prepared.THE INGREDIENTS YOU'LL NEED:
This recipe will easily stuff 12 Fillets. You can use Flounder, Sole, Halibut, Turbot, Catfish, Swai ETCFor the Fish stuffing we used:
- 2 Stalks of Celery -chopped
- Bell Pepper -1/2 cup chopped
- Butter -1 stick or 1/4 lb.
- Shrimp -pre-cooked, deveined and chopped. 1 cup
- Lump Crab meat -1/2lb.
- Bread Crumbs -about 1 cup
- White Wine -1/4 cup
- SPG -1 teaspoon
- Sour Creme -8oz. or 1 cup
- Hot Pepper Sauce 2 teaspoons of Pitmaster Privilege (optional but recommended)
- Pecorino Cheese -4oz. Shredded
- Paprika -a dusting
For the Lobster Gravy we used
- 1 1/4 lb. Lobster -steamed and picked. 4oz.
- 1 stalk Celery -chopped
- 1 Shallot -chopped
- 1-2 cloves Garlic -minced
- 1 stalk Green Onion -chopped
- Butter -1 stick or 1/4 lb.
- Heavy Cream -2 cups
- Clam or Fish Stock -24oz. 3 cups
- Tomato Paste -2 tablespoons
- Woostershire Sauce -1 Tablespoon
- Cayenne Pepper powder -1/2 teaspoon
- Bourbon -splash or shot
- Paprika -a sprinkle for color
