SMOKED BACON
It's quick and easy to make delicious smoked bacon for your burgers, sandwiches, and beans to serve up at your next barbecue, as shown by the BBQ Pit Boys.
THE INGREDIENTS YOU'LL NEED:
- Bacon – 3 lbs. Thick Cut
- Brown Sugar
- Tin Foil
- Hardwood Chunks – we used apple
DIRECTIONS
GETTING READY
1. Set up your grill for indirect grilling. Place hot coals on 1 side of the grill and no coals on the other side of the grill. You are looking for a temperature of 225 to 275 degrees Fahrenheit.
2. Place tin foil on the charcoal grate on the side of the grill with no coals
MAKING
3. Split the bacon into ½ lb. slabs. Leave it layered like it comes in the package just split the layers in half
4. Place the Bacon on the side of the grill with no coals (above where the tin foil is)
5. Sprinkle the Bacon with brown sugar
6. Add hardwood chunks directly on the hot coals to produce a light smoke
7. Cover the grill with the lid. Cook time will be about 2 hours
8. After 45 minutes add more hardwood chunks to the hot coals
8. After 2 hours or when bacon is done remove from the grill
FINALIZING
9. Use the bacon on Burgers, beans and any other recipe that calls for bacon
