Sugar Maple Spare Ribs
SUGAR MAPLE SPARE RIBS
Low and Slow Sugar Maple Ribs are known as Pitmasters sweet smoked pork candy. And, you can bet that the Food Police are coming to get some for themselves! So load up the guns and smoke up a big ol' batch. They're real easy to do, as shown by the BBQ Pit Boys.
THE INGREDIENTS YOU'LL NEED:
- Pork Spare Ribs – 3 lb. slab trimmed
- Pork Rub – ½ cup of your favorite rub
- Aluminum Foil
- Apple Juice
SAUCE:
- Apple Juice – ½ cup
- Maple Syrup – ½ - ¾ cup
- Hot Sauce – 3 Tablespoons
- Salt – ½ teaspoon
DIRECTIONS:
GETTING READY
FOR RIBS:
1. Trim excess fat and some of the flaps from ribs.
2. Score membrane with a knife or remove completely.
3. Apply pork rub liberally.
4. Wrap and let sit for 2 hours.
MAKING
5. Bring smoker temperature up to 225 degrees Fahrenheit.
6. Place ribs on smoker rack meat side up.
7. Add some chunks of your favorite wood for a light smoke for the first hour.
8. After 2 hours, remove ribs and place on aluminum foil. Roll up edges of foil.
9. Pour a ½ cup of apple juice in foil with ribs.
10. Wrap up ribs so apple juice doesn’t leak.
11. Place back on smoker rack for another 45 minutes.
12. After 45 minutes, remove ribs and open one end of foil and allow the juices to drain into a sauce pan.
13. Remove from foil and place ribs back on smoker rack to stay warm.
SAUCE:
14. In sauce pan add: apple juice, maple syrup, salt, and hot sauce.
15. Allow sauce to come to a simmer and thicken.
FINALIZING
16. Remove ribs from smoker and sear over hot charcoal for 1-2 minutes per side.
17. Baste each side with maple sauce while searing. Do not burn ribs.
18. Remove from grill and let rest on a cutting board.
19. Cut ribs into sections and pour remaining maple sauce over ribs.
SERVING
20. Fresh grilled corn on the cob, potato salad, hot link sausage, or cole slaw.
21. Sit back, relax, and enjoy!!
