THE INGREDIENTS YOU'LL NEED:
Pork Spare Ribs – 1 Rack
Your favorite Rub or one of our rubs you can find here; https://bbqpitboys.com//sauces-rubs-marinades
Apple Cider Vinegar
Your Favorite BBQ or one of our homemade sauces available at the link above
Beer – This can be substituted with water or apple juice
Chunk of your favorite hardwood – optional
A shallow pan
Roasting rack that fits into the pan
DIRECTIONS
GETTING READY
1. Place 2 chunks of your favorite hardwood into water to soak
2. Trim all the excess fat from the rack of ribs

4. Coat the ribs with Apple Cider Vinegar – Experts say that this opens up the pores in the meat allowing the rub to penetrate the meat and flavor the meat faster
5. Put the rub onto the ribs. Be generous and rub it in all over the rack
6. Set up your grill for indirect heat (hot coals on one side of the grill and no coals on the other side of the grill) – You’re looking for a grill temperature between 300 to 325 degrees Fahrenheit.
MAKING
7. Sear the ribs by placing them directly over the hot coals, about 2 minutes per side – this adds texture and taste but also locks moisture in the meat so it stays moist
8. After the ribs are seared, place the shallow pan with the roasting rack inside it on the indirect side of the grill (side opposite of the hot coals)
9. Put the rib rack, bone side down on the roasting rack
10. Pour beer or water or apple juice into the bottom of the pan – this will steam the ribs and help keep them tender. Check about every 20 minutes and replenish this liquid as needed. You want to keep the steam going.
11. Throw the 2 chunks of soaked hardwood directly on the hot coals. By soaking them they will smolder and create smoke and not just burn up right away. Even though we are not doing a long and slow cook the smoke will add some flavor to the ribs.
12. Put the cover on the grill
13. After 1 Hour. It is time to brush on your favorite BBQ sauce. Coat the ribs with your favorite sauce. Replenish the beer or liquid if needed
14. At the 2 hour mark your ribs should be done depending on your grill temp.
FINALIZING
15. Slice the ribs into 1 bone sections and put them on a plate and ladle some more of that BBQ sauce all over the top of the ribs
