The Santa Maria-style barbecue is a regional culinary tradition rooted in the Santa Maria Valley in Santa Barbara County on the Central Coast of California. This method of barbecuing dates back to the mid-19th century and is today regarded as a “mainstay of California’s culinary heritage.” Santa Maria-style barbecue centers around a beef tri-tip, seasoned with black pepper, salt, and garlic salt before grilling over coals of native coast live oak, often referred to as ‘red oak’ wood, preferred for authentic Santa Maria style BBQ, but any cooking woods or charcoals will work with excellent results.

The Argentine style of cooking allows the pit-master to control the heat from the glowing embers by way of the winch style hand turned wheel, giving height and heat adjustment with a minimum of effort in one action. Standard features include a single V-channel grate to draw away dripping fats from the fire and a thick clay brick fire-pit base that holds the heat. There are options to use either briquettes, lump charcoal or wood as fuel so you get those wonderful open fire flavors into the meat. Readily available woods such as apple, cherry or hickory are perfect for use on our Argentine grill. This style of outdoor cooking is not only social but delivers truly awesome food with ease.

Our wood fired ovens come in different configurations, from counter-top to fully enclosed base and wheels for ease of mobility. Each are constructed using powder-coated steel and feature fully insulated side walls to keep the heat in. This greatly improves your fuel efficiency. It’s as simple as starting off with with charcoal briquettes then add to the fire your favorite wood, lump charcoal or if you choose, cook entirely with regular charcoal briquettes to infuse your food with a fantastic smoky flavor. Control the fire with the built in damper and monitor the internal cooking temperature with the easy to read front mounted thermometer.
