How To Cook The Perfect Steak

Perfect Steak, BBQ Pit Boys Style

1. Choose Your Weapon
Grab a thick-cut ribeye, New York strip, or porterhouse. Don’t mess around with anything under 1.25".

2. Warm It Up
Let that steak hang out at room temp for 30–45 mins. Cold meat don’t cook right.

3. Hit It With The Good Stuff
Coat it in coarse salt, cracked black pepper, and a healthy dose of BBQ Pit Boys rub. Be generous — this ain’t no salad.

4. Fire Up the Grill
You want one side blazing hot and one cooler. Two-zone grilling, baby.

5. Sear It Like You Mean It
Slap that steak down on the hot side. Sear 2–3 minutes per side until you see that crust forming. That’s flavor, not burn.

6. Finish Slow
Move it over to the cooler side. Shut the lid. Cook it to temp:

  • Rare: 120–125°F

  • Medium Rare: 130–135°F

  • Medium: 140–145°F
    (Don’t even think about going past medium unless you lost a bet.)

7. Let It Rest
Pull it off, tent it with foil, and let it relax for 5–10 minutes. That’s how you keep the juices in, not on the plate.

8. Slice, Serve, Dominate
Cut against the grain, serve it up, and listen to the sound of silence — 'cause everyone's too busy enjoying your perfect steak.
