SHRIMP & CRAB STUFFED FISH WITH LOBSTER GRAVY -PART TWO

In this video a fish fillet is stuffed, grilled and served with Lobster Gravy.

THE INGREDIENTS YOU’LL NEED:

You can see these recipes prepared in Part One of the video series. Here we show you how to stuff the fillets and grill them.

For this recipe we used:

  • 6 Flat Fish Fillets. This recipe will easily stuff 12 Fillets. You can use Flounder, Sole, Halibut, Turbot, Catfish, Swai ETC
  • 2 Stalks of Celery -chopped
  • Bell Pepper -1/2 cup -chopped
  • Butter -1 stick or 1/4 lb.
  • Shrimp -pre-cooked, deveined and chopped. 1 cup
  • Lump Crab meat -1/2lb.
  • Bread Crumbs -about 1 cup
  • White Wine -1/4 cup
  • SPG -1 teaspoon
  • Sour Creme -8oz. or 1 cup
  • Hot Pepper Sauce 2 teaspoons of Pitmaster Privilege (optional but recommended)
  • Pecorino Cheese -4oz. Shredded
  • Paprika -a dusting

For the Lobster Gravy we used

  • 1 1/4 lb. Lobster -steamed and picked. 4oz.
  • 1 stalk Celery -chopped
  • 1 Shallot -chopped
  • 1-2 cloves Garlic -minced
  • 1 stalk Green Onion -chopped
  • Heavy Cream -2 cups
  • Butter -1 stick or 1/4 lb.
  • Clam or Fish Stock -24oz. or 3 cups
  • Tomato Paste -2 tablespoons
  • Woostershire Sauce -1 Tablespoon
  • Cayenne Pepper powder -1/2 teaspoon
  • Bourbon -splash or shot
  • Paprika -a sprinkle for color
