Beef Bacon Liver Burgers
For this recipe you're going to need the following ingredients
2 lbs ground Chuck Beef
1 lb of ground liver
2 cups whole milk
Olive oil
1 tablespoon of SPG
1/2 cup of Jalapenos
1 teaspoon of smoked Paprika
1/2 cup of brown sugar
1 tablespoon of garlic powder
1 tablespoon of marjoram
8 slices of thick sliced bacon
8 slices of Pepper Jack cheese
1 extra large onion
4 Ciabatta bread rolls
Method
Take the 1lb of liver and cut it into 1/2 inch slices.
Place the liver in a ziplock bag or a bowl and cover with milk and
let it soak overnight for at least 8 hours.
Once the soak has finished rinse off and pad dry with a paper towel.
Grind down or finely chop the liver down and add it to the 2lbs of ground chuck and place the mix into the refrigerator while you chop up the bacon into 1 inch pieces and fry them in a pan, take the bacon out before it's crispy.
Dice up the onion and place a tablespoon or so of butter and splash of olive oil into the bacon drippings fry them until caramelized/ browned.
Add the marjoram, bacon, fried onions, brown sugar, jalapenos, smoked paprika and garlic powder to the beef and liver and mix well by hand.
Form the mix into about 1 pound,, more or less, you choose how big you make them.
fire up a bed of coals until good and hot and place the formed burgers over direct heat and sear them up.
Once seared on both sides, move them to indirect heat and once you reach near cooked ( internal temp of at least 155f, add the sliced Pepper Jack cheese and continue the cook until the cheese has melted.
Toast the Ciabatta rolls and spread on some mayonnaise and dress them up real pretty with some fancy green stuff like Romaine lettuce if you have to serve them to vegetarians add some slices of tomato to keep them happy.
