Nothing better than taking some time to go crabbing, and cooking up some fresh Blues.

For this fried Blue Crab recipe you're going to need the following ingredients:
12 or so fresh Blue Crabs
Fresh chilis of your choice, we used :
Jalapeno, Cherry, Banana, Habanero and Red Chili Flakes
Ginger
Garlic
Scallion
Lemon
Beer
Butter
Salt
Cooking oil
Method
Heat the oil in a pan or wok. A wok is best for this as it's a very old Asian style of cooking crab.
The wok is great as it's got a curved base, match that with a curved end spatula and it's very easy to get right under the food to keep it in constant rotation which you need for this style of high temperature cooking, ( our gas camp stove pumps out 30000 BTU's)
Chop up all the ingredients and add to the hot oil, add the crabs.
We purged these fresh caught Blue Crabs in freshwater for around 1/2 an hour to clean out the gills.
There's no need to do anything more than purge them.
Leave them whole. There will be a ton of flavor when using this method.
Once the crabs have settled down, add the beer and drop a cover on the wok to steam them up some more. This won't take long, slightly less time it takes to steam them in a traditional way.
Add the chili flakes, a stick of butter and some salt.
Once all the shells have a consistent orange color, give it all a good mix until the butter has melted and they're ready to eat.
Serve this on a big plate, be sure to have some ice cold beers too, this is great beer food.
