4lb Beef Chuck Roast
Salt and Pepper
Rube the beef roast with oil and season well with salt and pepper. Dice the onion and garlic . Place the chuck roast direct over the hot coals to sear on all sides.
Once seared , take a pot and throw the roast in with about 2 tsps of both garlic powder and the Cajun seasoning, add just enough beef stock to cover the roast. Simmer this for several hours, checking the broth level from time to time. You'll know when its done when the roast is falling apart.Mix up some gravy buy adding a couple of tablespoons of flour into the broth. Serve on a french loaf, buttered and add stuff like fresh sliced tomato and shredded lettuce with a good helping of beef. Toast the whole sandwich for best results.
