Meatloaf Muffins recipe

For this Meatloaf Muffin recipe you're going to need the following ingredients
Olive oil Worcestershire sauce BBQ Sauce, use your favorite Garlic 2 Eggs Thyme Tomato paste Cheese, use your favorite cheese A muffin Tray Bacon 1 onion 1 lb pork sausage 2 lb Ground chuck Beef 1 lb Ground veal SPG, (or use salt and pepper with garlic powder)
Method
Dice the onion and add it to a pot with about 3 cloves of chopped garlic & some olive oil and cook it down a bit. Add the ground chuck, pork sausage and veal. add two eggs to help it bind together. Add the thyme and about 3 tablespoons of tomato paste and season with SPG. Add 1/2 cup of breadcrumbs Add a slice of white bread, just break it up into smaller bits. Add about 3 tablespoons of the worcestershire sauce Add about 1/4 cup of beer and give it a light mix and add the cooked down garlic and onions. mix gently together. Make the meat mix into giant meatballs and place them into the muffin pan, brush on the BBQ sauce and place the bacon on the top of the meatloaf muffins. Place the muffin tray onto the grill opposite the hot coals ( indirect heat ) for about an hour and 15 minutes until they reach an internal temperature of 165 F, make sure you have the grill temperature at 325 F ( 163 C), this will ensure a slow cook to keep it real moist. At about half way through you may way to draw off some of the bacon fat and rotate the muffin tray 180 degrees to be sure of an even cook. Once they reach the internal temp, grate some cheese on top and pace back on the grill to get the cheese to melt. Best served with mashed potatoes corn and gravy Eat and enjoy.
