Venison Roast Recipe
For this recipe you're gonna need the following ingredients.
Venison 2 lb Thick cut Bacon Potatoes Carots Celery Garlic Onion A good dry rub Beef broth
Method
First of all introduce some fat into roast by plugging it with the bacon. Use as many slices as you like, it's going to add some fat and flavor to the lean venison Add a good coating of the rub, we used our chili rub Here's the recipe for that, 8 Tablespoons coarse Salt 8 Tablespoons Paprika 4 Tablespoons Brown Sugar 6 Tablespoons Chili Powder 2 Teaspoons Ground Cumin 1 Tablespoon fresh ground Black Pepper Add it to the smoker at about 250 F for about 3 hours or so or to an internal temp of about 130- 140 F At about two hours into the cook, add the chopped vegetables and about a quart ( 1 litre) of Beef broth, Cook until the vegetable are done.
