Directions

1. Dice up the vegetable ingredients and add the olive oil and bacon to the pan and cook it down
2. Slice the English muffins in half, (not made in England)
3. Add some olive oil to a pizza pan or tray, whatever you’re using
4. Arrange the muffins closely together and brush on the pizza tomato sauce and add the shredded mozzarella cheese
5. Then add the cooked down ingredients from the pan
6. Add the grated Parmesan cheese on top and sprinkle over some extra virgin olive oil
7. Add the tray to the grill over a medium heat, we used a couple of house bricks to raise the pan up off the grate and a bit further away from the heat so it doesn’t get too hot.
