A good barbecue requires some real great tasting side dishes, so check out these BBQ Pit Boys style potatoes, covered with pepperoni and cheese, for your next barbeque food feast.
THE INGREDIENTS YOU'LL NEED:
Raw Potatoes – 4 lbs for a faster cooking time you can parboil the potatoes
Onion – 1 large
Pepperoni – 1 lb
Beer – 1 can
Paprika – 1 tsp
Red Pepper Flakes – 1 tsp To Taste
Chili Powder – 1 tsp
Garlic Cloves – 2 or 3 To Taste
Brown Sugar – 1 Tbs
Louisiana Hot Sauce – To Taste - optional
Cooking Oil
Butter – 2 Tbs
Grated White Cheddar Cheese – ½ to ¾ lb or your favorite cheese
Black Iron skillet – 1
DIRECTIONS
GETTING READY
1. Set up your grill for indirect heat (hot coals on one side of the grill and no coals on the other side of the grill) – You’re looking for a grill temperature between 350 to 375 degrees Fahrenheit.
MAKING
2. Place your skillet on the grill over indirect heat (side that has no coals)
3. Add enough oil to skillet to coat the bottom of the skillet
4. Slice your potatoes into bite size pieces and add them to the skillet
5. Slice your onion into medium to large pieces and layer them on top of the potatoes in the skillet
6. Cut your pepperoni into ¼ inch pieces and place them on top of the potatoes and onions
7. Add the following to the Skillet on top of the other ingredients
Garlic Cloves – 2 or 3 minced, To Taste
Brown Sugar – 1 tsp
Paprika – 1 Tbs
Red Pepper Flakes – 1 tsp, To Taste
Louisiana Hot Sauce – To Taste - optional
8. Do not stir just let cook in layers so the flavors melt down on top of the potatoes
9. Add the beer to the skillet – not too much, just enough to cover the bottom of the skillet - this helps steam the raw potatoes. You could also use water
10. Cover grill Cooking time will be roughly 1 Hour for raw potatoes
11. After 20 minutes
Rotate the pan on the grill to get even heating and cooking
Add 1 Tbs of butter to the pan
12. After 40 minutes
Stir the potatoes and other ingredients to mix them together
FINALIZING
13. After 1 Hour or when potatoes are tender
Add ½ to ¾ pound of white Cheddar or your favorite grated cheese all over the top of the potatoes
