Rum Pepper Shrimp Recipe

1 lb Shrimp Cooking oil 8-10 cloves Garlic 1 tsp Fresh Ginger, 2 Tbsp Ketchup 1/2 cup White rum 1-1/2 Tbsp White pepper 8-10 Fresh Chilis 1/2 tsp Sea Salt Cilantro 1/4 tsp Black Pepper

Method

Be sure the shrimp are not ice cold, you want them to be close to ambient room temp. Chop the garlic up real fine, it may seem like a lot of garlic but it's all part of the big picture to get the right result. Thin slice the fresh ginger, you can slice in into very thin lengths or you can also slice it into bigger thin slices and just use it for its flavor and not an ingredient you would eat once it's all cooked, ( big pieces of ginger really impart flavor into a dish but you really don't want to be eating it). Finely sliced is the way to go for eating. Dice up the red chili's, add some oil into a hot pan and add in the ginger and garlic, mix it up quickly and add the shrimp then hit it with a good dose of white rum, let it flame up for a second and stir the shrimp constantly. Add the ketchup and white pepper, be sure to use fine ground, it has a great mild heat flavor profile. Add another splash of rum and stir, add the ground black pepper, this is only going to take about 4-5 min max, at the end, add a good pinch of salt and the chopped cilantro. NOTE* Adding the salt right at the end is essential so it only brings out the cooked flavor, you don't want to add it in the beginning or the dish will be too salty. Serve hot OR cold.
